This has to be one of my family's lunch box favorites.. Thankfully its supper easy.. I normally throw this recipe together one afternoon when the kids have finished school and it serves as afternoon tea and lunch the following day.
Unfortunately the girls are on strike at the moment so for the first time for ages, we have had to buy eggs, I usually grow a couple of zucchini plants every year. This year the garden has not performed as well due to the cold wet spring.. So the one plant that did manage to survive is only just now starting to bear and its the end of summer (autumn really but I'm not ready to admit that.)
Anyway give it a go, and let me know what you think! I am a bit of a throw together cook so ingredients list quantities change depending on what i feel like
1 Cup of SR Flour, 1 -2 small zucchini (grated), 5 eggs, 1 cup of chedda cheese (this I vary depending on how healthy I want to be) 100gm-200gm Ham
Throw all the ingredients together and mix. Place in a 20cm square slice tin and bake at 180 C till golden brown
Sometimes if I have extra vegies like carrots or tomatos I want to use up I add them to.
