
Healthy Chia Seed & Oat Biscuits
This year one of my goals has been to get healthier. For me, that means eating more wholefoods, cooking from scratch, and enjoying food I’ve grown in my own garden.
I’ve always loved veggie gardening, and while I usually don’t mind cooking, sometimes the hardest part is simply deciding what to make day after day. That’s when little habits bring comfort — in our house, my husband Matt always makes an evening cup of tea. And sometimes, a small homemade treat alongside that tea is just what we need.
These chia seed and oat biscuits are my go-to. They’re quick to bake, full of goodness, and a healthier twist on a chocolate chip biscuit.
Ingredients
2 tsp chia seeds
1 cup rolled oats
1 cup plain flour (I use freshly ground wheat)
½ cup coconut
¼ cup sugar (I choose the least processed I can find)
¼ cup pepitas
100–120 g butter (whole flour often needs more liquid)
50 g dark chocolate chips
Method
Preheat oven to 180°C. Line 2 large baking trays with baking paper.
Whisk chia seeds with ⅓ cup (80ml) water in a small bowl. Set aside for 15 mins until thick.
Combine flour, oats, coconut, sugar, and pepitas in a large bowl. Make a well in the centre. Stir in the butter and chia mixture, mixing with your fingertips. Add the chocolate chips.
Roll 2-tsp portions into balls, place on trays, and flatten slightly. Bake for 10 mins or until light golden. Cool completely on a wire rack.
